Our family tried this recipe for Crock Pot Chicken with Black Beans and Cream Cheese last night, and it was delicious. I just love that this recipe has a whopping 5 ingredients. And I really love that it is one of those recipes where you dump everything in the crock pot at noon, the house smells delicious all day, and supper's ready by five!
4 out of the 5 of ingredients are on sale at Publix this week:
- Boneless Skinless Chicken Breasts: $1.99/lb
- Del Monte Canned Corn: $1.33 (for 2)
- Publix Salsa: $2.50
- Philadelphia Cream Cheese: $1.25
- Publix Canned Black Beans (regular price): $.79
- Serve over brown rice.
- Use just 2 boneless skinless chicken breasts instead of 4 - shred and mix meat throughout at the end.
- Double the black beans (2 cans) to make up for the chicken.
- Make homemade salsa using this Paula Deen recipe.

So funny- I made this for my family this week too! Question for you- did you use frozen chicken breast? I am guessing no since they are on sale at Publix this week. We used frozen and I was kind of displeased by the texture. My chicken was almost dry in the middle, which I don't understand since it was cooked in all that liquid. I loved the flavors, but was disappointed in the chicken.

Hey, that is funny! I did use frozen chicken breasts actually (I bought mine when they were on sale last time).
Since I shredded the chicken it didn't taste dry. But another reason might be that I pounded the chicken to flatten it out a little bit before I froze it so it would thaw/cook quicker. Another idea might be to cook it on low for a longer amount of time...let me know if you try it again!

This is the best recipe! We've been making it for about a year now at least once a month. Great for leftovers! I have used fresh and frozen chicken breats and they both work excellent because I shred them after they are cooked and falling apart. I also change it up, if I don't have cream cheese, I use sour cream. I also use only 2 chicken breasts because its plenty! I also put both black and pinto beans in and add some ground cumin, onion powder and chili powder but I don't measure. This is the most versitile recipe ever and always tastes great!!!
Do you put the cream cheese in with all the other ingredients or at the end?

I put it in at the end...it just needs to be in there long enough to melt and mix in completely.
