Menu Planning Monday


Here's our simple menu for a busy week...

Monday: Leftover Chicken, Mashed Potatoes, Baked Beans, Steamed Broccoli
Tuesday: Veggie Stir Fry with Teriyaki Sauce
Wednesday: Burgers, Squash Casserole, Potato Salad, Peas
Thursday: Leftovers
Friday: Broccoli & Cheese Nuggets, Steamed Carrots
Saturday: Leftovers
Sunday Lunch: Ummm...I have no idea - TBA!
Sunday Supper: Pancake Night!
Monday (Labor Day): Grilled Chicken over Salad

Broccoli & Cheese Nuggets
1 - 16oz package frozen broccoli, cooked, drained, and chopped
1 - cup seasoned bread crumbs
1 1/2 - cup shredded cheddar cheese
3 - large eggs
  1. Heat oven to 375.
  2. Coat baking sheet with non-stick spray or butter, and set aside.
  3. In large bowl, combine all ingredients and mix well. Shape mixture into nuggets and place on baking tray approximately 3 inches apart.
  4. Bake for 20-25 minutes, turning nuggets after first 15 minutes. Serve warm.
My notes: I make my own bread crumbs by toasting bread and putting it in the food processor, then adding seasonings. I also use the food processor for the broccoli, since it is much faster than chopping it all by hand. These are great to keep in the freezer in a ziploc bag and then just pop in the oven to reheat for a quick meal for the kiddos. We love them!

Those broccoli cheese nuggets sound wonderful! I love anything that can go in the freezer.
