Remember that post about freezing things in muffin tins? Well, I have another idea based on this concept that will knock your socks off! Okay, maybe not, but at least it might make your life easier (it has mine!).
When you have leftover sloppy joes (or taco meat, soup, or anything else of that consistency) spoon the leftovers into a muffin tin. Cover the tin with saran wrap and freeze overnight. The next morning, set the tin into a pan filled with warm water. Then pop the blocks out, put them in a plastic freezer bag labeled with the contents and date and put the bag in the freezer.
Now you have lunch or dinner ready to go at a moments' notice! I send these (along with some bread, of course) to work with my husband. They don't take long to defrost and are a yummy, filling, and cheap lunch.

This is a fabulous idea! Much better than trying to defrost an entire bag or tupperware container when you only want one serving!

Okay, don't think I'm weird, but this summer I plan to freeze eggs in muffin tins. Just crack one egg into each area, stir it up, (I don't know why, but I read you have to break the yolk) and freeze. Pop those babies out and store in a freezer bag. Great way to stock up on free eggs from grandma's farm. An ice cube tray or mini muffin tin (everyone should have one!) would also work.
I've always wanted to be one of those people who freeze leftovers but felt like the process was tedious. Yet I love this idea, thanks!
GREAT idea - I am a big fan of freezing individual meals and this will work beautifully.
I think I'll put some cling wrap (that's what we call it in South Africa :))in the muffin pan first so I don't have so much cleaning too!
Great idea! I imagine they would thaw in the fridge at work, on in a lunch cooler.
Can you just thaw one or two at a time? I see where this could be great for my MIL - a widow who loves to cook, has no one left to cook for, and doesn't want to fool with left-overs.

You sure can! That's why it's so great - just grab one or two blocks from the bag for an individual portion, or a few more for a family meal.

This is a great idea! I love to cook in bulk and this is another way to help me with the "freezer" process! Plus I agree with Carol, I have a cousin who is single and it would be much easier to share food with him this way.
My husband's aunt shared the same tip with me a few months ago. It works wonderfully!
