
It's Monday, y'all!
I'm trying to free up some money in the grocery budget by eating out of the pantry and freezer again this week. Here is our menu...
Monday: Leftover Chicken, Potato Salad, Baked Beans, Green Beans
Tuesday: Spaghetti, Salad with homemade Croutons
Wednesday: Leftovers
Thursday: Stuffed Potatoes*, Steamed Broccoli and Carrots
Friday: Leftovers
Saturday: Beef & Bean Enchiladas (except I'll be using venison!), Salad
Sunday: Chicken, Baked Beans, Squash and Onions
Sunday Supper: Whole Wheat Pancakes, Fruit
I ran across a recipe in one of my Paula Deen magazines for Stuffed Potatoes, which sounded absolutely delicious. Well, they definitely are, but for your heart's sake, it's best to have these only once in a while. However, your family will beg to have them often! I usually omit some of these ingredients for ours, but here is what is included in her recipe:
- Onions cooked in butter
- Mayonnaise
- Sour Cream
- Cream Cheese
- Cheddar Cheese
- Bacon
Now does that sound like a Paula Deen recipe or what? Good gravy, these things are just a heart attack waiting to happen! But they are so unbelievably yummy...

Mmmm, the stuffed potatoes sound heavenly. I bet those ingredients would also make a good mashed potato casserole. Have a great week!

Ha! It does sound like Paula Dean! I'd weigh 500 lbs. if that woman was my Mama! I need to get creative in menu planning this week too.... I took advantage of the $12.99 baby formula at Publix and stocked up on enough to get my daughter through the last couple months on formula before we switch her over to organic milk! I busted the budget, but it will pay off, it saved me about $30!
Wow, those potatoes sound absolutely delicious. I'll have to try that this weekend. My husband will really love me for that one!
did anyone catch Extreme Makeover Home Edition last night? This family with 4 sick children were on. The dad works full time and goes to school full time studying to get his degree in immunology so he can specialize in the disease that his kids have so he can find a cure for them. It was heart wrenching to say the least. CVS stepped up to the plate and paid all of the medical bills that had been incurred for the kids over the years and paid the dads tuition in full. I already love CVS for the great deals they allow me to get, but that made me really appreciate them even more.
I have a Paula Deen cookbook and am always hesitate to make something without having 9-1-1 on speed dial!!
